- 2 tablespoons (tea) sugar
- 1 spoon (soup) of dry yeast
- 1 egg
- 200 ml of slightly heated buttermilk
- 30 g of butter at room temperature
- 1 teaspoon (Dessert) salt
- 100 g flour (approximately)
- 2 tomatoes
- 200 g of crushed ham
- 200 g of shredded mozzarella quejo
- Oregano to taste
- 1 egg yolk
- 1 tbsp (tablespoons) butter
Method of preparation:
Mix in the mixer bowl the flour, sugar and yeast (do not put the salt not to harm growth). Add egg and buttermilk and mix on low speed with the dough hook for 8 minutes, if necessary add a little more flour to the mixer bowl unglued. Add the butter and beat for 10 minutes, to form an elastic and smooth. Cover with plastic and leave in a place with no air flow to grow by about 1hr 30. Make the filling and chopping tomatoes and sprinkling with a little salt.
Set aside for 10 minutes to lose water. Mix ham, cheese, tomato and oregano without water. Reserve. Separate 50 g of flour and mix with a tablespoon of salt. Tap bulk again for 10 minutes in a mixer, adding the flour and salt, if necessary add a little flour. Do not let the hard mass, it should be very soft and easy to stick to the hands. Bring to a smooth surface with a little flour and knead, tearing the dough with your hands. Divide the dough into two or three pieces. Open each piece of dough with a rolling pin, spread the filling and roll up carefully so that then do not unroll. Place each loaf on a greased form of bread with butter.
To glaze, melt the butter and let cool. Add the egg yolk and mix with a fork to mix. Make deep cuts with a razor, brush, sprinkle oregano and let rise again for about 2 hours. Preheat oven to 180 ° C and bake the bread for about 40 minutes until golden brown. Remove shapes and cool on a cloth, toppling both sides to cool evenly. Store in a tightly closed container or plastic bag.
